We all have fond memories of Papy Brossard's Savannah from our childhood, with its vanilla and chocolate flavor that we soaked in milk, because casually it was still a little dry, but we liked it that way. I offer you here the unmistakable marble cake recipe. And in addition to being delicious, it is soft ... you don't even need to soak it in a hot drink !!! I recommend a cake mold or savarin mold (with the hole in the middle) to see the pretty marbling when cutting. Wrap your cake in cling film when it is lukewarm, to prevent it from drying out when you are not eating it.

Separate the egg whites from the yolks (clarify) Whip the softened butter with two thirds of the sugar When the mixture is smooth add the egg yolks and continue to whisk until the mixture thickens. Add the sifted flour and baking powder. Finish mixing with a wooden spatula.

2nd step Whip the egg whites until stiff, gradually adding (in three times) the powdered sugar. Gently fold the egg whites into the dough. Use a spatula (maryse) and do not work the dough too much to prevent it from falling. Divide the dough in half Add the cocoa powder to half of the dough, mix gently. Add the vanilla seeds to the plain dough.

Step 3 Butter and flour your mold. Pour in the vanilla paste first, then cover with the chocolate paste.
With a spatula, a knife or a fork, mix the 2 pasta from the bottom to the top, roll up the chocolate dough of vanilla dough to form volutes. This should only be done once to avoid over-mixing the two pastes.

Preheat your oven to 180 ° C (356°F). Bake for 45 to 50 minutes. depending on your oven and check the doneness by planting the blade of a knife, it should come out dry if the cake is well cooked. Turn out onto a baking rack for 10 minutes. after removal from the oven. Let cool before cutting into slices.
